Step 1: Cool leftovers quickly
Get leftovers covered and into the fridge or freezer within 2 hours of cooking. Speed things up by splitting large amounts into smaller, shallow containers. Rice is stricter – aim to chill it within an hour.

Your fridge should be at 5°C or below. Don't overfill it – cold air needs to circulate.

Write the date on the container. Eat leftovers within 2 days (cooked rice within 1 day). If you won't get through them in time, freeze them instead.

Let it cool a little first, but don't leave it out for more than 2 hours. Dividing it into smaller containers helps it cool quickly.
How long do leftovers last in the freezer?
Freezing keeps food safe for a long time, though quality drops. Defrost in the fridge and eat within 24 hours of defrosting.
Why is rice treated differently?
